Maybe this belongs in the Feedback section but here goes ...

The SGF Store offers a full string set for the Stage One but not the Encore.

Why not?

Stage One is a fixed setup and it specifies a wound 6th string. Encore can be rodded to accommodate wound or unwound. The Stage One string set (as was the Carter-Starter string set) has a wound 6.
