Either more range (an additional high or low note) or more non-slant chords (an additional note in the middle). It really depends on your playing style.

More strings always mean more tuning options, which is why the typical jump up is from 6 strings to eight strings.

For me, there are two reasons to choose 7 strings over 6 or 8 strings;
1) if your favourite 6 string tuning is an open chord, having a 7th string makes it easy to add a 6th, 7th (or 13th), without altering your other 6 strings.
2) if you play a high tuning, like CEGACE, adding a lower note at string 7 gives you more bottom end, ie/ GCEGACE.
The opposite is also true, if you have a low tuning, like DADF#AD, the 7th string can be used for a higher re-entrant string, ie/ fDADF#AD.

It probably makes more sense to go to the more common 8 string instruments if your main goal is just to have more notes available.

7-string steels make the transition from C6 to A6 a snap, without losing the root on the bottom string, or having to deal with a skinny, pingy top string. This one is headed my way...

...and I'm rife with anticipation.
