What is a good and sturdy alternate to replace these plastic "wing nuts" used on the legs and pedal rack of Sierra PSGs?

Doug is correct. Jim Palenscar has machined alumnum replacements for those finger torturing plastic ones. |

That part is an Allen bolt with a plastic wing nut pressed onto it. You could take that bolt to a hardware store and get a replacement, and use an Allen wrench to tighten/loosen it, or possibly find another style of plastic lever to press onto it (they use a vice to press them on, with a piece of wood to protect the threads).
I also have a Sierra Session Series with square legs like this but have never had a problem with that part.
