What is the optimal width of the milled flat part on a sitar bar? What is the thinnest that would work?

Does anyone have closeup pics of the Franklin style sitar bar?

In my experience, the thicker the better. It sounds the most like a sitar if it's heavy enough to almost just lay on the strings by itself. You want to put almost no downward pressure from your hand.
