I saw a post not too long ago with a link to this youtube video not long ago, and I really want to know what this style/technique is called. It sounds like you're intentionally hitting wrong or not fitting notes and then it resolves beautifully. Is there theory behind these? Licks like these are what send shivers down my spine, but no matter how hard I try to replicate them I just can't to it. Some examples below:

Or Marty stewart's "this one's gonna hurt you" at 2:12

What other players/songs really knock this out of the park? And more importantly - who has some tips?!

It’s called counterpoint. One tone raising as the other is lowering. The second example is a pretty common one. Search the forum and YouTube for counterpoint licks. You should be able to find some.
