what video sharing platforms (alternatives to Youtube) are acceptable to the Forum?

You could use Vimeo.

I don't think there's an issue of what is "acceptable" to the Forum since the Forum doesn't host the videos on it's own server. They're hosted externally (e.g., at YT, Vimeo, etc.) and you just post a link to them.
