I want to build cases for a couple console steels I built. I need some sort of padded lining for the inside. Anyone have a suggestion for what to use?

I've built several pedal steel cases. I use crushed velvet or by another name crushed velour. If you want some additional padding use 1/2" foam and cover that with whatever covering material you use.

i made a ton of cases using acoustic speaker material both inside and out

tolex is a material that comes in many flavors to suite your taste for the outside. as a side note, the carpet is way easier to fool with than fabric since it has body, nice to have when working with quick setting adhesives.
