What do the controls on a Sierra do? I'm picking this one up at the weekend any advice on setting up / change of copedent also welcome.

One switch is for the tone control. Switch on and the control knob is active.

The other switch is Sierra's triple range pickup selector for the 3 different sounds. Your pickup only has the one row of pole pieces so I don't know if the pickup has the triple range function. The triple range pickup has three rows of pole pieces.

All the Sierras I've owned had the 3 range pickup so I can't advise if the switch does anything on yours. Possibly other players have experience with the switch on these single row pickups.

Of course one of the great features of Sierra guitars is the pickup interchangeability just by sliding another one in so....

I acquired a Sierra last year and rearranged most of the pedals and knees. My best advice is to wear gloves. Everything underneath is a sharp as a razor. Better yet, take a file and small vacuum cleaner and round off the edges on every bell crank and suck up the shavings before you go to work.
