What does it mean by Emmons set-up
or Day set-up?

Paul,

Typically, the difference between a Day and an Emmons set-up comes down to the three E9 pedals, known as the A,B, and C pedals.

Emmons used ABC pedals, Jimmy Day used CBA. Their set-ups may be extended to the E raise/lower levers as well.
