Yeah, they were some of the best. I am glad to see there is a lot of their stuff on YouTube. As to tuning, I would think they used the standard tunings of the era. George was a bit older and probably started on acoustic guitars in G or A and would have progressed with other tunings as they were developed.

an SGF member in South Africa cites A6th raised to F#7 by raising the A to A#. That is logical as the recording was made about the time A6th became widely known, and the open strings can be heard ringing
A6th = E C# A F# E C# top down.
The thing about that Youtube is the turntable is a bit slow. I tweeked it to pitch with Audacity software. I then transcribed the entire 9 rounds. But I am not intending to do it in that tuning. 95% of the arrangement is on the three strings of the triad. So it can be played in G tunings. My reason is that I am using most of his ideas on a Weissenborn acoustic guitar. And I'm guessing many of George's ideas for the tune came from his acoustic days. (Certainly not his virtuoso harmonics.)
Royal Hawaiian Hula is ten bars, but unlike most hulas, the turnaround is three bars, which gives George the opportunity to insert driving walk-ups to opening phrase. His tone is beautiful too, but the instruments he had in photos don't look all that special, so it goes to show what can be done by a master.
PS the shuffle backing is pretty cool too.
