I've noticed the pedal rods on my old MSA are developing a light, fine rust in places. I'm assuming that a fine grit emory cloth will clean them up fine for now.

What's commonly used as an inhibitor? A lubricant of some sort? Should the rods be dipped/coated as a longer term solution?

Metal crafting is not my forte'.

I wouldn't worry about dipping or coating them. A good cleaning with fine steel wool, every year or so, should keep them shiny and bright!

In addition to what Donny said, if it is an issue, you could wax them with a carnuba wax.

A light coating of 3&1 then wipe off or gun oil will stop it after sanding with emory paper.
