I'm making the switch from my Goodrich 120 to a Hilton pedal.

I like the feel of my Goodrich but don't want to deal with pots anymore. For those that have used both, which feels more like the Goodrich 120, the Hilton Standard or Hilton Low Profile?

Standard will likely be your closest comfort level. I used to use a low profile Goodrich and switched to the standard height Hilton very comfortably. I later tried the low profile Hilton and wasn't nearly as comfortable as the standard height.

I went from a Goodrich 120 to a standard height Hilton. It will take a short time to get used to it but you will like it.

As far as EQ. I didn't change anything on the Peavey Nashville 1000 I was using at the time.
