Is microphone cable a good choice for making guitar cables and does the size of the wire make a difference in other types of cables ?

If your microphone cable is two in the center plus a shield you should be fine just using one or both of the center conductors for the hot and then the shield as the outside ground. Look up the spec on your particular cable if it has a part number. You want low capacitance per foot. High cap per foot can bleed off the treble. You can compare spec on your wire to other guitar cables. Usually what works for mics works for guitar.

The best sounding cable I ever made was braided core video coax, but it was a little too stiff.

Mic cable won't work for speaker cable. Use #18 zip cord for that. Higher gauge = smaller wire diameter that will cause problems for speaker wires.
