What are the options for eight string?

You could put E strings in there for G6: DBGEDBGE(high to low)

Ok, finally got keyboard to work properly.

With D tuning, what could the other two strings be tuned to on an eight string.

Well,,,,, what kind of music do you play? I'm currently experimenting on a S-10, with a G tuning based on Bottleneck Low G. Very powerful-sounding tuning.
Lo to Hi DGDGBDG, and still fooling with the high 3 strings. The low 6 strings are classic Bottleneck Low G, while the top 6 strings have the same intervallic relationship as E or D tuning. My pedals also give me E minor tuning, plus other chords. It's fun!

John-that G tuning is very close to classic Cajun steel. You could use pedals to give you a C out of that,too.
For non pedal,a G6 is what I use on 8 string-[lo EGBDEGBD hi ] also C6 is popular or a D7 [DF#ACDF#AD] could be cool if you are focusing on D tuning.
