When I choose a style and prefer a different instrument, like acoustic piano vs. Rhodes, I can't get that change to hold when I save the track. What am I not doing correctly???

Hi Roger, you need to save "with patches ...". (not on a biab machine right now, so working from memory). When the dialog box comes up, make sure the new instruments are checked to be saved. Volume changes between instruments are also saved here.

Roger,
When you're ready to
save, just hit Alt + F2
and proceed that way.
