I am a beginning TablEdit user, and I'm trying to figure out how to indicate the use of a pedal or a knee lever when writing out the tab. I guess I could always just print it out when I am done and pencil in the pedals and levers, but the musical notation at the top of the score will still be wrong. How do you guys do it?

Go down the list and have a look at "Tab for Nola".
note that the music notation is for the timing only (players who use tab generally don't read notation anyway) and a,b,c indicated the pedals (1,2,3) while e indicates the e lever (drop the e's) - f the f lever (e up to f) and so on.
The late Sid Downs devised this system for steelers in Oz many many years ago (Scotty uses pretty much the same in his published books eg. the Anthology of PSG) and it caters for 99% of players in that if you understand music notation you can play the timing (and see the bars) and don't have to listen to a track of the song - although that still helps a lot.
I still find it best to wrote them out initially with a good script pen to keep it neat and legible especially when scanning it to electronic.

Roger,
Have a look at the help index under Pedal Steel Guitar. There's lots of good information there on how to setup the pedals.
Then when the cursor is on a specific tab note, you can just type the Capital Letter of the pedal [A for example] or hit Ctrl-H and pick it from the pedal list. The pedal designation will appear in the tab, and the pitch will change accordingly in the notation staff.
