I install my tracks on itunes to practice with. The "recently added" list is a mile long and I'v found no way to delete that list once its no longer needed, am I missing something,???

Depends on your OS and version of iTunes. Try clicking on View/View Options. There you have a bunch of columns to check or uncheck.

Are you talking about the Playlist (rather, "smart playlist") that is in the Sidebar by default?

If so, you should be able to ctrl-click (or right-click) and either Delete it or actually Edit it to your liking. You could shorten the range of time, or you could limit the number displayed, for example.

You can't ever selectively delete individual tracks out of a Smart Playlist, though, if that's what you're trying to do.
