Every now and then I see some pics of Sho-Buds with mini toggle switches on the changer end plate. Are these 'coil tap' switches? And if they are coil tap switches, does the coil tapped pickup sound bright and twangy like an old Fender pedal steel?

Yes, those are coiltap switches. A shobud dual coil pickup, for instance, can be wound to about 17.5K and coiltap at 11.5K which many feel is ideal for most early model shobuds, bringing out the sweetest tone. The 11.5 would give you a thinner, more acoustical tone, somewhat of the early '60's. I find the hotter you wind a 'bud pickup, the muddier the tone, and even "over driven". YMMV

I can flip that coil tap switch, tweak my amp a little and play closer to the pickup and get a pretty twangy sound from my Professional.
