stacked humbucker question

I'm wanting to set up a peavey predator with 2 single-coil-size pickups at the bridge & neck positions only.

Some of the info on these pickups says "single coil sound". Shouldn't they work like any other humbucker and get a humbucking sound too? It might be a dumb question, but I'm confused.

Any recommendations for stacked humbucking pickups from users? I've never even played a guitar with them on it and hate to buy totally blind.
