Bearing in mind that pedal steels have very little in common with straight guitars...I'll say the following (assuming we're talking about pedal steels).

Humbucking pickups have far less noise. Single-coil pickups have slightly more clarity and dynamics.

Players (even the "pros") use both types, so it boils down to personal preference...more or less.

Unless you're going from a 9k pickup to an 18k pickup, don't expect a "night and day" difference. Differences between, say, a 16k pickup and an 18k pickup are very, very subtle. In fact, a 1-number change in your "mid" control will have far more effect on your sound than just about any pickup change you can make. Why is this? A pickup is an analog transducer, and all a pickup can do is change the EQ or output of a signal.

Now, all that said, pickup changes on straight guitars can have far more significant effects. Why? Because straight guitars are so different. They have thin necks, they have smaller and more resonant bodies, and they usually have multiple pickups with switching networks and tone controls. On a straight guitar, pickups can interreact with each other, offering amazingly different tones. Of course, this cannot occur on most pedal steels. We have a solid body, and one bridge pickup. That's it! Mr. Green
