I saw a pedal steel being played on youtube the other day, and it seemed that the guitar moved a considerable amount whenever a knee lever was used maybe an inch or more sideways. Is this normal, or is it adjustable with leg braces or ?

For most guitars, this movement is not an issue. It will happen more on light weight guitars, and when players are aggressive with their knee movements.
I have a Williams and a Zum. Both are very solid and have no problem with moving around when the knee levers are engaged. I have played some guitars, especially student models, which were not so stable...

No sideways movement with the old FENDER PSGs. (400----2000 Models) Smile

switch to an SD-10 it solves the problem
i have always hit the knee levers a bit hard and on the student model guitars (carter & GFI )
i found it to be very distracting. it wasn't as noticable on the Zum stage one

My Pro~II moves a bit when I engage a knee lever agressively, but not enough to bother me. Certainly not an inch; maybe 1/4". I've noticed the same on lots of guitars. I suppose this could be overcome by constructing the guitar like a tank, but the added weight would far offset any benefit, IMO. Possibly a wider angle on the legs would help. It would be interesting to hear a builder's opinion on this.
