I'm playing with a band that is using "standard" tuning (EADGBE) - what should I tune my lap to? Open D or Open G???

Either one should be fine. If you like to use a lot of open strings, you might look at the keys your singer uses the most. Instead of that, I'd pick the tuning that you can make the most of -- D with the root on top, or G with the 5th on top. All of your G licks on the 1st-2nd-3rd string will "translate" to the 2nd-3rd-4th string of a D guitar.

As you get more familiar with the lap steel, you will probably be looking at more "flavorful" tunings with a 6th or b7th added to the open chord.
