I got a USB Turntable for Christmas... been playing around with it and Audacity on my Mac. Now I have the ability to digitize my massive oddball vinyl repository. now if I only had the time... like ole Henry Bemis
Interesting features of Audacity are built in algorithms for pop and click removal, and for taking something recorded at one RPM setting and converting it to another- say you record an LP @ 45RPM (a bit over 25% faster) then you can slow it back down to 33 1/3 RPM in software. This is also how they suggest recording 78's (the turntable does 33 1/3 and 45)- record the 78 @ 45 and speed it up in software
I did not notice an appreciable difference in sound files created at 33 1/3 vs recorded @ 45 and slowed sown in software. but I haven't had the time to listen very critically.
They're all getting dumbed down to MP3's anyway so ...

Audacity also has a key change feature, that does not slow down or speed up the song (you can also do that if you want to). The bass sounds a little odd after doing this for some reason, but it works plenty good for practicing. This could have something to do with the MP3 resolution that I used. There may not be a problem with a .WAV file or with a higher resolution MP3.
