if one was interested in building a pedal steel where might one find parts for said project, any ideas?

If you really want to build your own, get a used 10" Logan or a 9" Southbend lathe with a milling attachment and get to know the local hot rod or vintage motorcycle guys who cast parts in very small runs. Cabinet work is hard, especially the cosmetics of a lacquer finish. But there are folks who can do the woodwork to your specs.
If you want to assemble a guitar, buy a beater and take it apart and put it together again.
