I love the sound of the TrueTone on my single neck, and would like to try one on my double, which has George L's on it. Can I use a single-coil and a George L on the same guitar?

Yes. If you have a switching arrangement that allows both pickups to be on at once, you'll notice even more differences in the sound, due to the vastly different impedances of both pickups together.
