For a small club PA - I think mixing stereo is generally a bad practice. Mix your pan dead center - else half the audience will miss half your program since they all can't sit between the speakers - esp. if they're dancing etc.
Not sure what the big concert sound guys do.
Stereo effects (reverb, delay) out thru the PA, or your amps is a different story, it adds space, that's the advantage of stereo -but still you'd pan the channel center and let the effect do it's thing. And, use effects minimally else risk having your sound washed out and smearing all over the room - unless you intend to feature the effect of course (L-R pan, rotating speaker etc.)
