My GeorgeL 12-1 humbucker has 3 wires. Black, red & braided. Is the black the hot one? Also, is the red one meant as a tap-off to select coils?

Joe,
You tie the black and the braided together for your ground and the use the red for your hot. The braided is just a shield.
