I've picked up a Princeton (non reverb) for my steel for low volume playing and recording. I was interested in picking up the Princeton because I saw Russ Pahl and Justin Schipper use it for recording.

Anyone on here have experience using these for pedal steel? and if so, what speaker did you end up going with?

Schipper uses a lil buddy speaker in his black panel non reverb.

Kind of the opposite of keeping it quiet but I use an eminence tonkerlite 12” in my Princeton Reverb. It gives the amp enough headroom to keep up with a dynamic drummer without PA support. It’s not overly middy, but if you wanted less mids some of the other eminence neo speakers could work.

Tim Marcus recommends Jupiter Ceramic speakers for his Fender-style custom amps...I have one in a 40-watt Pedal Steel Mini, and it is quite nice.
I have the 12LC 50-watt version, there are a couple of 25-watt versions you might like, check them out at https://jupiter-speakers.com/collections/ceramic/12
They are quite economical also...$100-$135
