What is the string spacing like at the nut? Is it harder to do JD type pull offs on an 8 string?

I don't have the spacing at my fingertips but the answer to your second question is definitely "different".
Whether it's harder or not... Depends on your skill set and how long it might take you to get comfortable.

Just had a quick look at mine. The spacing is a bit under 5/16” center to centre. 2-1/16” total. I tend to play mine more “swing style”, so can’t answer the second question either.

Just checked spec from my old days at Beard. For comparison , this is what we used for nut spacing. I would presume that Gold Tone is using close to this spec.
At the nut:
6 string - 8.75mm
8 string - 7.5mm

So I guess it would take some to become acclimated to it, I could possibly play some G tuning licks I already know,just skip the E string.

Skipping the E (assuming G6) is always the difficulty when playing 6 string G licks at "speed".
But, there are things you can do once you understand the neck's theory. Partial chords, minors, diminished and dominate 7ths.
They are all there.
