That is to say you can pick two pitches for a string and switch on the fly. I can’t play it

This looks to be a Hipshot Trilogy bridge. when set up correctly you can get 3 pitches per string and literally dozens of tunings available on the fly with great stability. I had one (6 string) for many years and it worked great.

This is a beautiful looking guitar. Wish you were in France. Whoa!
