How do players shift between tunings on a multineck guitar during a song?

I have been interested how the western swing players shifted between the A6 and E13 or Kayton Roberts going to the F tuning from C6.

I think most of them leave all two or three necks on at the same time. Watch Noel Boggs, Speedy West, and Alvino Rey.

Yep - gotta have all necks on. Here is Kayton demonstrating his incredible playing. Notice the switch is in the middle position:

Here is Buddy Merrill hitting all four necks of his Quad Stringmaster. Can't see the switches but they all must be engaged for him to hop from one neck to another without missing a beat:

Selecting all necks lessens the output of each pickup so you have to compensate with tone and volume on your amplifier.

Especially with Buddy's clip you can tell all four necks are on... it gets real thin and 'zingy'. Big job keeping the necks muted when doing this!

Yessir! You especially don't want to get your jacket's cuff buttons caught in the strings. This was a big problem when I wore fancy western shirts with three or four snaps on the cuffs. The ones on my picking hand would always get caught in the strings. I learned to roll the cuff on my right hand up about an inch or two so all the snaps were covered.

Yes, make sure all the necks you need are on before you start the song.

It's very embarrassing when you jump to another neck mid solo and find it's off.

Doug Beaumier has a guitar on his "Stranger on the Shore" song that has push button switches on it. The credits say it's a 1955 Fender Stringmaster Quad.
