The Everlys- Mandolin Wind
Rolling Stones- Let It Bleed
Tammy Wynette- Crying Steel Guitar
That's the only ones that I can remember.
I'm sure there must be a few more. But not to many, I guess.

Paul Anka - "A Steel Guitar and a Glass of Wine"
Jean Shepard - "Crying Steel Guitar Waltz"

I assume you're not talking about instrumentals with "Steel Guitar" in the title, but there are several vocal versions of "Steel Guitar Rag."

I imagine there are many Hawaiian songs, (and/or fake-Hawaiian songs) as well.

Charly McClain's 1985 hit, Radio Heart, mentions steel guitar in the chorus. WSM has been playing it lately. Nice steel by Papa John.

A few years back, an artist named Nanci Griffith had a song called "Love At the Five and Dime" and there's a line that says, "Daddy played the steel guitar"

Also, George Strait's "Twang" says, "some pedal steel whinin' like the whistle of an old freight train". And even though a steel ain't heard in Eli Young Band's song "Even If It Breaks Your Heart" features the lines, "Every note just wrapped around his soul, with steel guitars and Memphis all the way to rock n' roll, and Lionel Cartwright's "I Watched It All On My Radio" features the lines, "a station from Nashville sometimes would appears with steel guitars and soft Southern twang
