I want to like this stompbox, which is like a chest full of 50 stompboxes, but its interface is weird and always baffles me, I've wasted so much time trying to grok how to set up patch memories, etc. Anyone understand the underlying logic to this item?

I am a long time user of Zoom Multi effects and this one follows the regular system they use however in an effort to be more muso friendly it's interface tries to simulate single stomp boxes. I don't have one but I can offer you some advice. generally these are designed to work well on a Strat, a Tele or a Les Paul so on a steel you have to be pretty adventurous.
I can't find in the specifications which chip/s they are using in this model but I do know from experience that some they use just DON'T suit steel especially if you want clean sounds. I have tried a couple of their latest models and ditched them - OK for guitar but not for steel.
You need to establish an order to chain your effects in if you use more than one (they normally have a recommendation in their manual about this).
As far as amp models go the only approaching clean model (that I can see in their list) will be the Vox one and it is always pretty middy (simulated) class A never totally clean. There are no truly clean Fender samples there that I can see and the really clean samples they used to have - the Roland Jazz Chorus & Fender Blackface (twin) - are not there. If you want clean I would suggest to bypass any amp modelling IF YOU Can and just use the Delay, Reverb, Chorus and EQ into your amp - I find this usually works well. There's a lot of groovy effects names there so it should impress the wanna be's.
It takes ages to familiarise yourself with these types (multi-effect) of units and that is why they remain only used by the dedicated few.
I still use the older G2's as I prefer their sampling. They are all OK for distortion playing (they get the dual rectifier sounds OK) but the fuzz thingy's seem to work best (for steel) with solid state amps rather than overdrive samples IMHO.
I am still learning new tricks on mine after many years of use eg. the Delay will do all the tricks a Roland DD3/5 will do but it takes forever to get them set to suit. Maybe this model is easier to set up although by the sound of things you haven't found that.
The good news is there's one power supply and one "toy" to set up and pack so give it every chance.

thanks for the input, Jim. I don't use any of the amp models, they're all gainy and hissy. Some of the FX are pretty decent. But it's how to string them together, make several different FX chains, that torments me. I have queries in to other active forums where they discuss this box, maybe they can help.

I'm using chiefly for oddball sounds that don't warrant a space on my PedalTrain Mini pedalboard. Like phaser, detuned, octaver, specialty sounds like that.

Gosh John - sounds like a Steve Miller re-visit - wow!
Good luck with that. Actually that seems to be a producers trend here - to use the steel for weird effects instead of just straight music.

A local music store let me borrow one to try out. I like the effects and eq's. I'm planning on getting one.
