I am considering an upgrade to my squareneck now that I am playing out fairly regularly ... thinking of having one built ... what wood combinations are best for optimum sustain and volume? What other considerations are there for these qualities?

I think the type of wood being used affects the tone of the instrument, but has little to do with the sustain and volume. Those are influenced by the cone, the size of the body, and many other factors.
The primary determining factor in good sustain and volume is the player.

What's your budget? Who are you considering having build your guitar?

Tom would be a very good choice. I would highly recommend you discuss your questions with him directly. He'll be able to provide answers based on much more experience than any of us who don't build guitars would have.
