Although it´s not instructional, there is a video "Waylon Jennings - the Lost Outlaw Performance" which has some totally great playing by Mooney and many nice close-up shots. Also, if you wanna play like Moon, make sure to have that single E to F# raise (absolutely crucial) and either high F# to G or even better, G# to G on your guitar.
I´m a big Mooney fan too and figured out a lot of his stuff just by listening.
