Good move.
I have Goodrich and other PSG oriented VPs, but prefer cheap BOSS FV50L VPs and angled jacks for a number of reasons.

Rick, good move. I have used the Ernie Ball pedals in the same manner with no issues. I do prefer the Goodrich volume pedal overall because I'm used to it.

Probably be fine. The biggest issue is the jacks are on the front of the pedal. You just have to arrange the cables so they don't interfere.

That will work for sure beautifully, you wont need a 500k pot for practicing.

Prior to arrival of your pedal steel, I agree on practicing on a Dobro style guitar.

That will help you practice putting proper pressure on the bar, and 'string attack' with your picks
