If I recall correctly, Lloyd Maines was the steel player on Wilco's first album, A.M. "Dash 7" is a particularly excellent example of his playing... it's mostly a steel feature.

You could always get an A/B/C pedal, and just not use the "C" channel. I'm not sure I've seen one with an off setting.
