That is a track they performed for TV or a movie. Usually only the singing is live in these situations.. I would guess its either Grady Martin or Pete Wade's guitar playing from the recording.

Along the lines of what Dave said, I'm not hearing anything in that version of Take It Easy that couldn't be done on a standard E9th.
